WOW I am up early. I would wake up at 6am on my second day of summer. Because what else would I want to do? Sleep? Hah. Who needs sleep, right?

Unfortunately, I do. 😦

Moving on from my sad state of sleep deprivation, happy Friday! In my current state of summer delirium I had absolutely no idea what to post this morning, and then caught a glimpse of the title of Brittany’s post. Perfect!

Some Things Need To Be Said.

Good morning! It’s looking like it’s going to be a pretty fantastic day over here. School’s out, the sun is shining (ish), and all that’s on my agenda for the day is some running, nail-painting, and coffee dates. I. Love. Summer.

But it is actually the wonderfulness of life right now that prompted me to post about this. I was debating whether or not to, to be honest, because I wasn’t sure if it was smart to basically reveal my hometown on the internet. But then I decided that if an ax murderer really wanted to get me, they could figure out my IP address easy enough. (Optimistic, hey?)

The point is, a city close to me has been hit hard with two MAJOR disasters. The first was, which you may or may not have heard about depending on where you live, the Southern Alberta flood. Long story short, torrential rainstorms started in Canmore and worked their way up to Calgary, destroying buildings, homes, evacuating hundreds of thousands of people from their homes and killing at least two people. The damage estimate is over two billion dollars. And THEN, on top of it, train cars carrying toxic fuel fell into a river, and a bridge collapsed. I’m fully aware that much bigger disasters have occurred elsewhere (hello, hurricanes and tsunamis) and I am by no means negating them. But this happened so close to home that I feel 100% compelled to say something about it. I don’t even know what the purpose of this post is to be perfectly honest, but it’s been on my mind (and most of my province’s) for a week now and speaking out was necessary.

Actually, that’s a lie. I do know what the point of this post is. The next time your basement floods, or or deck chair snaps, or you drop your iPhone in the toilet, just get some perspective. Call your insurance, grab some duck tape and/or a bag of rice and calm the heck down because things could be so much worse.flood(Via)

That picture above is much more symbolic than just depicting the flood. Through two wars and the Great Depression, the Calgary Stampede has never been cancelled, and it sure as hell won’t be this year, despite the fact that this occurred merely 2 weeks before the opening.

Phew! I don’t want this day to get too heavy, so moving on to some lighter stuff now.plan-travel-world-panda-cry-for-help-ecard-someecardsWho wants to see me off at the airport? 

In 2 weeks, I’m leaving for a month in Europe! I literally haven’t traveled in years, so I am beyond excited for this life-changing opportunity.IMG_0582Speaking of life-changing, I would really love to appreciate the changes that come along with that. Any tips on how to not die in this kind of heat? 

But I’ll be honest. I have absolutely no idea how posting is going to go. I just started blogging, and I’m suuuuuper hesitant to just say “Sayonara” for a month. In fact, that is most certainly not happening. Now that exams are over, I’m going to be super hard at work writing up drafts to automatically publish while I’m gone.IMG_0579Not, um, doing this.

I’ve never done that before, so I’m not sure if it will even work, but that’s the best idea I’ve come up with. I’m planning on updating on my Instagram, @lifesarunner, but I’m not going to be attached to technology. This is 100% a once-in-a-lifetime opportunity and you had better believe I am going to be soaking up every second of it! That being said, I’m not abandoning Life’s A Runner either. I just wanted to send out a heads-up. 🙂

My trip is divided into three parts: Volunteering, a trip with my mom and then visiting a friend, so it should be beyond easy to pop in and say hi on those last two. I have absolutely no idea how guest posts work in the blog world, and I don’t actually have that big of a following, but if anyone is interested, shoot me an email at lifesarunner@hotmail.com!

Back to the food-related topics, I changed up my breakfast again! I skipped out on the granola this time because although it says “Organic” it’s actually totally not. I checked the ingredients and there is chemical after chemical. I’m not going to throw it out, but I’m not going to have it daily either. I just substituted half a banana and some cashews. 🙂

There’s a chance I’ll be back later in the afternoon since today’s post was rather rambly. Hope everyone has a terrific day!

What To Do When…WIAW.

Today is the hump day of all hump days.

Today is my LAST. FINAL. EXAM.

In exactly 4.5 hours, I will be free of school, free of grade eleven, and most of all, free of PHYSICS.

Remind me why I took that class again? It’s okay, though, because I used this handy dandy calculator to discover that I only need to get 38% on this test to end the year with a B! I don’t use this class in my honours calculations so it doesn’t actually matter that it’s not an A. 🙂 I know most of you are done classes by now (god, I hope) but that website is perfect for deciding which exams to actually study for. (Because we all do it.)

Todays WIAW is all about last Thursday’s eats, and what to do when you’re too brain dead to function AND the stomach monster eats all of your food.  Thanks to the wonderful Jenn for hosting! 🙂 

I’ve said it before and I will say it again. Emma studying = Emma does not cook. Emma does not eat meals. Emma snacks all day long. 

I changed up my breakfast! Well, I’m not sure if this legitimately counts as variety in the real world, but when I’ve been addicted to the exact same thing for at least a month, it does for me. 😉 I changed my granola variety! Mornings have become such a sanctuary for me lately. I wake up slooooowly, amble out of bed, get my breakfast, and eat it on the couch while browsing blogs. I obviously can’t do this during school, so even though I’m studying all day long, having the freedom to relax in the mornings has been life changing. Literally. I firmly believe that beginnings of everything (January 1, Mondays, mornings), they all set up how the rest of your time is going to go. So if it starts off great, it will stay great! yogurtPlain greek yogurt with strawberries and apple cinnamon granola! 2% latte (unpictured, as always) on the side, as always.

Did you know that studying makes you dehydrated? It’s a fact. Your body sends water and oxygen to your hard-working brain, and that’s why a long session can make you feel as tired as a workout! When I heard this my whole entire life pretty much made sense again. So drink (and eat up!) when using that brainpower. This was snack #1.bananaBanana + small handful of cashews.

obviously couldn’t last the whole morning with only one snack, so I munched on this piece of wonderfulness while pretending to  studying physics. I really wish someone would tell me when, where, and how simple harmonic motion is going to be relevant in my life. LarabarCoconut Cream Larabar.

At about 2:30, I dug in to this beauty. I’ve literally been craving a panini for six months, and this hit. the. spot. I needed to get out of the house badly, so it was time for a quick lunch date at an adorable little cafe downtown. Although it wasn’t exactly a panini (the bread was slightly too hard and there weren’t those lovely ridges) it was still super delicious! I was actually thisclose to buying a panini press, before I found out you could make them in the WAFFLE MAKER! What?! Expect tons of recipes coming ASAP!

Annnnd, dinner was, although not uber camera-friendly, delicious. The Herb Crusted Pork Chops from Eat Yourself Skinny are to DIE for, along with every single one of her other recipes.dinnerHerb crusted pork chop, asparagus, cherry tomatoes + butternut squash.

 Before bed, to (attempt to) relax I had a homemade 2% decaf latte and some dark chocolate with strawberries. I feel the same way about this day as Amanda talks about in her post about nonstop hunger days. Our bodies aren’t stupid. They don’t ask for fuel when they don’t need it, and on this particular day my body needed it! I had a hard workout the day before, and intense exercise always steals my appetite…and adds it on to the next day. And to be honest, I am not even over thinking it. It’s weird, there are some days where I wonder how I could have ever struggled with food. And then there are other days where everything seems like an uphill battle, but I suppose that’s normal.

What are your favourite time-consuming snacks? I want to try some unique things out now that I actually can!

It’s no secret that I’m madly in love with coconut.

When I’m dreaming up recipes, I almost always think – “Can I add coconut to this?” And that’s not even an exaggeration. I’ve never met a coconut product I didn’t like, until I met coconut butter.

Gasp.

I had heard so much hype about it, but when I finally got my hands on it, it just didn’t feel right.

So what was I to do? I had a big jar of the stuff staring me down every time I reached for my beloved nut butter, and I had no idea what to do with it.

Let’s sidetrack to the fact that I have my math final in 2 and a half hours. I really should be reviewing and studying, since the university I want to go to uses our grade 11 marks for early admission. What did I actually do?

Make Coconut Cashew Butter, of course!

In addition to the butter I wanted to use up, I also had a whole bunch of pesky broken cashews lying about. I don’t know about you, but I literally hate eating broken nuts. It’s definitely one of my idiosyncrasies, but I just can’t seem to get over it. And since my brain is 100% fried from nonstop studying, I decided that I needed a “Throw everything together and say a prayer” recipe. Heaven was born!

Homemade Coconut Cashew Butter:

Ingredients:

  • 1 tsp natural coconut butter
  • 1 tsp butter
  • 1 tbsp coconut butter (Yes, this is on twice! It needs to be separated!)
  • 1 tbsp coconut flour
  • 1/4 cup cashew pieces
  • 1/2 cup water
  • 1/4 cup almond milk
  • Stevia to taste

Directions:

  • Heat up a skillet and grease with 1 tsp of coconut butter and 1 tsp regular butter
  • Mix the tbsp of coconut butter, coconut flour, cashew pieces, stevia and water together
  • Pour lumpy mixture on to skillet, and fry for ~5 minutes, or until nuts soften slightly
  • Pour mixture into blender (I used my Magic Bullet), add almond milk, and whir it up!
  • Make sure all nuts are blended in and mixture is smooth before removing from blender
  • Makes roughly 1/2 cup

Uh, can you say YUM? I personally don’t always love paying ~$10 for a jar of nut butter, so I love that this is so cheap and easy!

Embracing the Idiosyncrasies.

If you know me remotely well, it’s no secret that I am a huge English nerd. I’m captain of the Grammar Police, will always choose books over magazines and spend spent way too much time on my English homework. (Although, I’m not going to miss it for the next ~2 months)

Idiosyncrasies is one of my all-time favourite words. And yes, you had better believe I have a list. And while I love the word in itself, I love them in real life, too.

So for this week’s MIMM, I wanted to bring up my most-loved idosyncrasies. In life, friends, myself, they ALL make us who we are and turn our lives into exactly what they should be.

Because, let’s be honest. Not just anyone gets authentic Danish vowels written on their bananas.

And, you know, I’m pretty much certain that not every high school student gets to go to Monster’s University.

We all spend way too much time obsessing over things that in the grand scheme of things, are 100% irrelevant. So enjoy life please, and embrace all your idiosyncrasies. 🙂

Idiosyncrasies is one of my all-time favourite words. And yes, you had better believe I have a list. And while I love the word in itself, I love them in real life, too.

So for this week’s MIMM, I wanted to bring up my most-loved idosyncrasies. In life, friends, myself, they ALL make us who we are and turn our lives into exactly what they should be.
