Good morning/afternoon/evening wherever you are, I hope your day has been lovely 🙂
My morning started off on-the-go with a Starbucks Spinach, Feta + Egg White Wrap. It was okay. I certainly prefer my smoothie + eggs combo that has become the norm around here, but there just wasn’t time this morning. Our parkade was being cleaned, and if the car and bikes weren’t out by 8am, we would be hit with a $200 fine. Not. Cool.
It didn’t actually look this good 😦
Anyway, the day dragged on a little bit like Thursdays tend to do for me, but I ended up making it home in one piece. Tonight we are planning on having a super amazing dinner, a rarity for a weeknight! It sort of came to be through a “throw everything in the fridge into a bowl” type of way, but isn’t how the best recipes turn out anyway?
Spinach, Feta + Asparagus Salad: Serves Four
-1 bunch asparagus, cooked + sliced
-2 cups sliced strawberries
-4 oz feta cheese
-2 medium tomatoes, chopped
-4 oz baby spinach
Combine & enjoy! I don’t believe we have a dressing planned, but it will probably be something along the lines of olive oil + apple cider vinegar. Yum 🙂
I’m planning on attempting a protein frozen yogurt tonight, so that should hopefully be up tomorrow! Have a great evening everyone 🙂
